- Bunch of Mint
- 200ml Vinegar (I used malt but white wine vinegar or white vinegar are good)
- 100ml boiling water
- 150g caster sugar
- 1/4 of a lemon
How do I put this together so my lamb can taste all kinds of good?
In a pan put in the vinegar and sugar and bring to the boil, add a squeeze of lemon juice and when all the sugar has dissolved pour into a jug with the boiling water and a pinch of salt.
Put all the mint into the food processor and through it's chimney pour in the liquid (Pour slowly until there is enough liquid, any left over keep in a separate jar for your next batch of mint) whilst blitzing away until fine and blended.
Pour into a jar and leave to cool, put the lid on and make it fancy with a circle of material, twine and a pretty tag.
Voila! Minty lamb awaits you.
